The Gourmet Touch: Flavored peanut butter dresses up childhood favorites

No doubt about it — new food products excite me. Recently, I learned about the delicious spreads made with all-natural Pacific Beach Peanut Butter.

Of course, behind each new product is usually an interesting story, and Pacific Beach is no exception.

As the story goes, a recent college grad by the name of Matthew was enthusiastic about entering the business world until running into the brick wall of unemployment and recession. After several unfulfilling jobs, Matthew decided to start his own business — one that produced natural peanut butter and flavored peanut-butter spreads. He tried many different combinations of flavors, a process he found to be a challenge as he did not want to sacrifice flavor in order to get a healthy product.

After much experimenting and a lot of encouragement — especially from his mom and his grandfather, a retired executive — Matthew launched Pacific Beach Peanut Butter in 2011 and his new business endeavor was a success.

A few days ago, I received my box of Pacific Beach flavored peanut butter spreads. Of course, I immediately grabbed a spoon and began tasting each one. My favorites are the white chocolate and toffee varieties, but there are others that may appeal to your palate as well.

Inspired by the tasty spreads, I first tried a spin on the classic PB&J sandwich for us older kids. For this simple snack, spread some of the white chocolate peanut butter onto your choice of bread and top with raspberry jelly — or jam or preserves, if you prefer. This adds an elegant flavor to an old childhood favorite.

Next I decided to make my peanut butter cobbler using the toffee spread. I was not at all disappointed. I topped a serving with vanilla ice cream and then sprinkled a little crushed chocolate-covered toffee candy bar over the top. The result was a dream dessert, but it is super rich so you might want to start with a small serving.

Peanut butter pie is a favorite around our house so I have been trying to decide which of the Pacific Beach products I should try in my next one. The white chocolate peanut butter spread would be good in the filling, which I will probably spoon into a chocolate crumb crust.

TOFFEE PEANUT BUTTER COBBLER ALA MODE
½ cup plus 2 tablespoons Pacific Beach Toffee Peanut Butter Spread
1 cup warm water
1 cup sugar, divided
1 cup miniature marshmallows
1 teaspoon vanilla extract
1 cup self-rising flour
½ cup milk
½ cup milk chocolate chips
Vanilla ice cream
Chocolate-covered toffee candy, crushed

Combine ½ cup of the peanut butter spread with the warm water. Whisk until smooth. Add ½ cup sugar and whisk until blended. Pour into an 8- or 9-inch square baking dish or pan. Sprinkle the marshmallows over the top — they will float. Cream together the remaining 2 tablespoons of peanut butter spread and the remaining ½ cup sugar. Add the vanilla extract and mix until blended. Add the flour alternately with the milk. Beat until well mixed. Spoon on top of the marshmallows. Sprinkle chocolate chips over top. Bake at 350 F for about 30 minutes or until delicately browned. Allow to cool slightly before serving. Add a scoop of vanilla ice cream on top of each serving and sprinkle each with the crushed toffee candy.
